Baobab & Turmeric Rice recipe

You might think that baobab powder only tastes delicious in smoothies, juices, porridge desserts... Wrong! Its citrusy flavour is perfect for savoury dishes too.


In West African cuisine, baobab powder is commonly used for its healing properties, but also as a spice to add a lovely zingy flavour to dishes.


We sometimes add it to rice together with turmeric for a tasty, colourful and nutritious meal.


Here is a delicious recipe for you to enjoy with the rest of the family.


Baobab & Turmeric Rice served with vegetable stew and plantains


INGREDIENTS:


- 1 big onion

- 2 cloves of garlic

- 1 cup easy cook long grain rice

- 2 tbsp SACO Baobab Powder

- 2 tsp turmeric

- pinch of white pepper

- 1 handful of coriander

- 2 cups of water

- 1tsp salt (optional)

- 3 tbsp sunflower oil


INSTRUCTIONS:


  1. Wash the rice and keep on the side

  2. Add the oil to a pan and, when hot, add the finely chopped onion and garlic.

  3. Cook until translucent then add the rice, salt, baobab powder, white pepper, coriander and turmeric.

  4. Stir the rice until is fully coated and toast for 1 min

  5. Add water and cover the pan

  6. Cook the rice on low heat until it's done

  7. Let rest for 5 min, then fluff with a fork and serve with your favourite stew or curry.

  8. Bon appetit!


TIP: I serve the rice with our favourite vegetable stew and banana plantain, but you can serve it with anything you fancy. This meal is also gluten-free and suitable for vegan.
